Meal Prep Chicken Seasonings

Over the years I've become a pretty big fan of meal prepping. I found it an easy way to ensure I'm eating often and healthy especially on my busiest of days. However, one of my biggest challenges with meal prepping is the receptiveness of the meals. There's only so many times one can eat chicken over rice before they start hating it. I've learned the most important and simplest way to have variety in my meals is to use different seasonings each day. So while I might be eating chicken three times in one week, each chicken dish will have a different taste and flavor.

If I've learned anything from being my mother's daughter is to always always always have my spice cabinet/ fridge well stocked and if I can use fresh herbs. It baffles me how many recipes say to season with only salt and pepper, there are a million spices at your disposal and it's a crime to not use them. I'm not exactly an expert but, I know enough to know that a dish won't be successful if it's not seasoned properly.

Personally these are the spices, herbs and, ingredients I think are necessary for every kitchen to have at all times: 

oregano, thyme, basil, rosemary, parsley, cilantro, paprika, cyanine pepper, chili powder, onion powder, garlic powder, cinnamon, cumin, tumeric, methi, garam masala, curry powder, curry leaf, allspice, whole black pepper, salt, saffron, dill, crushed red pepper, ginger paste, cardamom, cloves, honey, lemon, lime and, olive oil 

I thought I'd share some of my favorite chicken seasoning mixes, perfect for all your meal prepping needs or even a nice dinner! With all of these I place in a freezer safe ziploc with my chicken and leave it in the freezer until I'm ready to use it. Usually the night before I'm ready to cook it, I'll put it in the fridge to thaw. Depending on my mood I will either bake or grill them. Each of these are for one serving ie one chicken breast, so feel free to multiply as needed. 

Chicken Shawarma

1/2 tbs honey

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp salt + pepper 

juice of 1/2 lemon

1 cloves garlic minced or grated

pinch of crushed red pepper flakes

1/4 cup olive oil


Tandoori Chicken

1/4 c Greek yogurt

1/2 tsp finely minced ginger

1/2 tsp finely minced garlic

1/4 tsp Garam Masala

1/4 tsp chili powder 

1/4 tsp cayenne pepper

Juice of half a lime

1/2 tbs oil

3/4 tsp salt or to taste

1/4 tsp turmeric powder

oil (for basting)


Cajun Chicken

1/2 tsp Garlic powder

1/4 tsp Onion powder

1/4 tsp Oregano, dried

1/4 tsp Thyme, dried

2/4 tsp Cayenne

1/2 tsp Paprika

1/4 tsp Pepper

1/2 tsp Salt

Olive Oil (for basting)


Sweet Chili Chicken

1/4 c sweet and chili sauce 

1 tbs sirracha 

juice of 1 lime 

1/4 tps paprika

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp salt and pepper
