Easy Garlic Butter Shrimp Recipe

Growing up with a mother who can cook better than any five star chef, I've become quite the food snob and am always seeking out a delicious meal. When I'm fortunate enough to be home for dinner (12hr hospital shifts woohoo), I like pursing the pantry and whipping up a recipe using flavors I'm seeking. Zero recipes, sometimes I'll Pinterest something like "sweet and sour" or "chili lime" and skim some ingredients to get an idea but nothing much.  I think recipes take away all the fun in cooking. The other night I whipped up a yummy spaghetti dish which was a little similar to shrimp scampi. I posted the final product on my Instagram stories and received a few recipe requests. So here it is, a delicious dinner ready in under 20min! 

Ingredients (serves 4, measurments are ish do what you like):

3/4 of a box of spaghetti we used thin spaghetti, use whatever you like. 

1lb of shrimp peeled, devined and thawed

1/4 cup of butter melted 

1/8 cup olive oil 

4-5 Cloves of garlic minced 

2-3 tbs red chili flakes, or to your taste omit if you must

Juice of half a lemon 

2 handfuls of parsley, chopped

1/2 tsp of dried oregano 

Salt to taste

Black Pepper to taste 

Directions (or do what you like!):

Mix all the ingredients except the spaghetti and shrimp together making a marinade. Mix in shrimp thawed to room temperature and set it aside letting the juices soak. Cook spaghetti like you would normally, I like to add a little salt to my water. Once spaghetti is complete, drain and set it aside. Pour the shrimp and marinade into a pan and cook until done. Mix in the cooked spaghetti, and you're done! I like to add some parsley, extra red chili flakes and lemons to garnish. But it's not needed.
